My mom discovered several organic, health stores online last year. Now, about every 4 months, she orders there lot’s of superfoods, organic herbs and healthy versions of products like peanut butter. That’s something that I, as a student who still lives at home, truly don’t mind. The past months I have been experimenting with our new ingredients and I tried out different sorts of recipes. This one, I’m sharing with you today, has been a popular one among my family that has been made repeatedly.
One of the main ingredients is Raw Cacao. Raw Cacao is also a so called superfood and has many health benefits. Like it lowers insulin resistance, protects your nervous system, it gives your mood a boost and reduces your blood pressure. Raw Cacao is also full of antioxidants, which helps protect healthy cells from damage caused by free radicals. So besides the fact that these Raw Chocolate bites are delicious, they also contribute to a healthier body. Enough “talking” for now… let’s move on to the part about how you can create these little treasures:
What do you need?
-50 gram Coconut oil
-3 big tablespoons of Raw Cacao powder
-80 gram (seedless) Dates
-Shredded Coconut, you can add as much as desired
-a Foodprocessor, a Mold, Fridge and/or Freezer
What should you do?
Put the Dates in the foodprocessor and blend them until they have become small structured pieces. Melt the Coconut Oil in a pan, on a medium heat. When the oil has entirely melted, you can add the Raw Cacao spoon by spoon. Stir until it has become a nice blended mixture. Add the shredded Dates to the Cacao & Oil mixture and stir everything together. Keep stirring for one more minute and then it’s time to add the shredded Coconut. Make sure the Coconut blends in with the mixture. Put the pan off the heat and divide the mixture into the mold. Place the mold in the freezer and leave it there for at least one hour. You can also put it in the fridge but then you have to wait a little longer, for about 2 hours. The structure of the chocolates will differ a bit if you put them in the fridge. They will be a bit softer than the ones from the freezer. Personally, I prefer putting them in the freezer. When the Chocolates are hardened, you can get the Chocolates carefully out of the mold. Pour yourself some coffee or tea and take some time to fully enjoy these delightful and healthy bites. P.s. you need to keep these treasures in the fridge or freezer. If you don’t, you will find your little treats in a liquid state of mind again.
